You know those days when you just don't wanna leave home? all you want to do is relax and watch your favorite t.v show or movie right? Maybe more so during rainy/stormy evenings....well, I have just the right appetizer to go along with days like those.
The idea to make these came from Instagram. A friend of mine (Bianca), uploaded a picture with something that just made my mouth drool. So, I figure it would be easier to make them at home than having to drive to the restaurant, not to mention saving some bucks.
I made this appetizer for my love one and he loved it. My girlfriends had the pleasure of tasting them and they gave it a thumbs up as well. Give this a try am sure your loved ones will enjoy them.
To add some sparkle may I suggest serving the bruschettas with a nice cold glass of moscato. Hope you give it a try.
What you will need:
- Tomato sliced in circles
- Mince fresh basil
- 3 garlic cloves
- Balsamic vinegar (I used raspberry flavored, purchased @Homegoods)
- Sea salt
- Ground pepper
- 1 french bread baguette ( cut into 1/2-inch slices)
- Fresh mozzarella cheese, sliced
- Moscato - I used Cavit { click here to see }
Directions:
- Preheat broiler. Over medium heat in the stove place a pan/sarten & the baguettes. Let it get brown on one side then turn them. Holding one garlic clove marinate it over the still warm bread slices. You will notice the heat from the bread will melt the garlic as you spread it over the bread. Repeat on both side until you have covered all the baguettes. Place baguettes in oven tray(spray with favorite cooking spray or light olive oil). Then proceed to add mozzarella cheese, tomato and fresh basil. Broil for 3-5 minutes, keep an eye on them because they can burn pretty fast. I'll suggest placing rack in the middle. Take tray out of the oven, place in serving dish, sprinkle a little bit of sea salt, ground pepper and drizzle with balsamic vinegar. You could also drizzle olive oil. Serve with moscato. Enjoy! :)
