Holiday Chocolate Cupcakes

With the holidays right around the corner desserts and warm drinks are a must. I recently had the yummiest cupcake at my near by mall. However, that tiny bite of heaven was $3.50. A reasonable price but not to buy more than one. So.. I had a brilliant idea! Let me make my own.
I searched and searched and I could not find a good recipe. This cupcakes had to be super moist, not overly sweet while at the same time with hint of coffee to bring the chocolate flavor out. ....

5 days later Finally I was able to find a recipe that promised to turn out great but no hint of coffee! oh no! so I said to my self once again, "what the heck just make the recipe your way" .... SCARY! I know.. but it the turn out was GREAT!! 

These cupcakes are all made from scratch; the best kind.

 Here is what You'll need:
 1-3/4 cups all purpose flour (sifted)
 2 cups sugar
2 tsp baking soda
1 tsp baking powder
1 tsp kosher salt
1 tsp vanilla extract
1 cup unsweetened cocoa powder (I used Hershey brand)
1 cup strong, freshly brewed coffee (NOT HOT, let get sit to room temperature)
2 eggs @ room temperature
1 cup buttermilk (Not regular milk; don't have any? make your own: one tablespoon of lemon juice per cup of regular milk)
 1/2 cup vegetable oil
*Holiday sprinkles (optional)

 Start off by preheating your oven to 350ยบ F. In a large bowl mix all the dry ingredients(flour, sugar, cocoa powder, baking soda, salt, baking powder)and set aside. With a hand/electric mixer, mix wet ingredients(buttermilk, eggs, vegetable oil, vanilla). Now incorporate your dry ingredients slowly into wet ingredients bowl; careful not to over mix!. Once all ingredients are incorporated pour in the coffee(yes all of it). Your mixture will be runny but trust me it will turn out fine. I transferred the batter to a pitcher for easy pouring; this can turn into a mess really fast. Fill cups up 3/4 or 2/3 of the way up. Bake for 13-16 minutes or until toothpick comes out clean. Let them cool off for 30 minutes before applying any frosting. Enjoy :)
